Dessert Berry Berry Mousse Just now I had another blackbox competition for the 2nd time in Fullerton. But unlike the last time where I competed against the other trainees, this time, I and my teammate who is the only trainee to compete with the people who have more experienced than us, the commis chef. You can see that the appetizer didnt look appetizing at all. I really didnt feel inspired at all this time. I wanted to focus more on the main and dessert so, my team mate and me decide to just get it done and over with. I freaked out when I first realise they didnt provide any common starch like potato but instead there were beans like barley and lentils! And barley I choosed. And for the first time of 2 years in culinary life, the barley I did today tasted like actual risotto! But I was not too happy about the platting. My mind was all blank. And for the dessert, I'm overjoy! I have tried many umpteen times to get my mousse consistency right and today, the outcome was a success! But the sucky part is that they provide wine glass instead of martini glass and everyone tells me it look strange to serve mousse on a wine glass. I didn't enter this competition with the thought and intention to win, infact I have never did with the past competitions too. I join for the experience, for my learning process and for the fun of doing it. And from this competition, I've learnt alot, from my chef, teammate and myself and also, now that I know my weakness I'll definitely try even harder. To be the only trainee team to join the competition, I think my teammate and me are brave enough to go against them. I left with 12 more day to end my intern. I really can't wait when this is over and then I'm gonna hibernate before I go botak!  |
